It’s basically a quick, convenient, and easy alternative to a traditional oven, perfect for preparing light weekday dinners. But do you often find that food cooked in air fryer comes out dry and crumbly? Don’t worry, my air fryer chicken breast recipe ensures tender, juicy meat, no breading required. With just one simple trick, you can prepare a healthy and delicious meal in no time.
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano

For quick weekday dinners, I usually choose boneless, skinless chicken breasts, because that’s what 90% of us have in the fridge. They cook faster and are more difficult to keep moist. Fortunately, if you follow my recipe and instructions, you’ll get chicken breasts that are incredibly tender and juicy, just as good as any oven-baked chicken breasts or sous vide chicken breasts.
How Long to Cook Chicken Breast in Air Fryer?
Air fryers from different brands can perform differently, and chicken breast thickness also varies, so cooking times are just estimates.

Whether the chicken breast is cooked through actually depends on the internal temperature, which is the most reliable factor. Remove the chicken breast when it reaches 160°F. I know the USDA recommends 165°F, but the chicken will continue to cook from residual heat until it is fully cooked to safety after being removed from the air fryer.
How to Make Air Fryer Chicken Breast
Step 1: Brine. Place the chicken in a large bowl with 1 tablespoon of salt. Add cool water in, then cover the bowl and refrigerate for 1 hour to overnight. When you’re ready to cook, take it out, pat dry, and let it come to room temperature.
Step 2: Season. Rub or brush a thin layer of olive oil over the breasts. Then, mix salt, black pepper, smoked paprika, garlic powder, onion powder and dried oregano in a small bowl. Sprinkle the seasoning over the top, and rub again.

Step 3: Insert the wireless probe. Insert the probe of your wireless thermometer into the thickest part of the breast. Make sure the tip is in the center of the meat. Set your target temperature alarm for 160°F.
Step 4: Air Fry. Preheat your air fryer to 375°F for 3 minutes. Place the chicken breasts smooth-side down in the basket. Do not overlap them.
Step 5: Flip. About halfway through the estimated time, flip the breasts, and continue air frying until the internal temperature reaches 160°F.
Step 6: Rest. Transfer the chicken to a clean plate and tent it with foil. Let it rest for at least 5 minutes before serving.

Why is My Air Fryer Chicken Breast Dry?
It usually comes down to three things.
- Overcooking. The air fryer works fast, so relying on time or cutting into the meat to check for doneness leads to dryness. The fix is simple: use a meat thermometer. Pull the chicken at 160°F and let it rest.
- You didn’t coat it in oil first. A thin coating of olive or avocado oil creates a barrier against the intense dry heat. Without it, the surface of the meat dries out before the center is safe.
- No brine. Brining with salt and letting it sit in the fridge for overnight helps the meat retain moisture during cooking. Even a 30-minute dry brine works in a pinch. Just remember to pat it dry before oiling.
How to Serve Air Fryer Chicken Breast?
Air fryer chicken breast recipes are only as good as what you do with the leftovers. Because this method gives you a blank canvas of tender meat, you can:
